Once the canoe is finished in the sanding stage, a coat of hot boiled linseed oil is applied to the exterior of the hull. A thinned coat of spar varnish is applied inside. Here Alice and mark are varnishing the inside. The oil has been applied and a band around thew top is left undone so when you are leaning into the canoe varnishing you don't get it all over your shirt.
